Best way to freeze catfish fillets?

Cleaning some catfish now and want to freeze them for a few months. Should I fill the bag with water or dry them and freeze them dry?

In water, in a ziploc freezer bag.

In water, ziplock bag. Place outside. When frozen for free then place in freezer.

Season them up the way you like em, batter some (or all)if you want to fry them. Lay them out on platters tonight. Put them in ziplock bags tomorrow, dry. When you are ready to cook them, pop them in the oven or grease. No need to defrost. You can do this with any fish FWIW.
