Jambalaya cooker experts

Wife got me a 5 gallon pot with stand and burner. Rif did not come with a hose to go to bottle. I went to big box store and got hose and regulater (10psi) i think in a kit.
Burner lights and does great on low, but when i turn valve on any higher it blows the flame out immediately.
Question is, what psi regulator do i need for this jamabalya bur er??

Go buy you a Hoke brand needle valve to fine tune adjust your flame. Mount it as close to the burner as possible. Preferably screw it onto the jet fitting. Have you adjusted the air flow damper? That can help at times but generally those "ball" valves included on burners are made for a regulator putting out much less pressure measured in water column increments. The needle valve works wonders. Have them on all my burners.

It has a brass valve connected to actual burner. I bought a hose that hooked to it and then went to regulater, which hooked on bottle

You don't need a regulator, only a needle valve is necessary.

this was the problem, got it corrected! I used poche's recipe with boston butt. I can cook a very good jamabalaya perfect in a dutch oven but was time to step up.

All went good, i was a little nervous about when the rice popped, but just like you said it floated to the top and became alot more difficult to stir. I think where i messed up (due to the burner) was the fire was too low when i covered it. (usually in my dutch oven when i cover i like to see steam piping out the top in about 2 locations)
there was no steam coming out the top. anyway, after 25 minutes when i went to "flip" there was a lot of moisture still on top, so i covered and let it go for another 12 minutes. I cut heat, flipped again and it looked alot better. i let it sit another 20 minutes and allthough it wasnt gummy, it was a little sticky. everyone loved it, but i am pretty sure i could have done better if:
a) burner was working properly, got that problem solved
b) fire a litte hotter once pot is covered.
