We've got one of the wusthof lines and have enjoyed them. I'm sure there are cheaper brands that are quality.

Rada if you're looking to go cheap. Don't be fooled by the price. They're good. I won't lie to you and say they're the best. Hardly, but they stay sharp if you look out for them.

Just get a set of steak knives, don't bother with the butcher block as it only takes up counter space.

I'd go with Chicago Cutlery stainless with the walnut handles. Not sure of the name as Chicago Cutlery has many sets. They have a lifetime warranty and I have had several replaced over the years free. Because they have a stainless steel blade they can be sharpened. Check E Bay and look for a 62 S and that will give you a lot of information. Even used they are great knives. I just bought 3 and they were almost like new for 30 bucks.

Man, I've recently found this site....[link=(www.chefknivestogo.com/?)]LINK[/link]
Its a guy who is a chef who started a web site, has tons of japanese knives and some american stuff as well. His line is called richmond.
Many people recommend not getting a full set, but buying in pieces to get knives that you want exactly. I am ordering a chef's knife from this site this week. Some pretty good deals on hand made knives.

All you need is a nice santoku knife and a pairing knife. I wouldn't get a "knife set" that sits on the counter, you won't use any but what I have mentioned here.
Henckels and Wüsthof make affordable knives that are of great quality.
