I smoked a turkey on Wednesday and the leftovers have been in the fridge. I want to make a gumbo with it today. Do you guys think it is still good? TIA.

My dad made a wonderful soup with my smoked turkey carcass. He boiled that with a couple porters, a bottle of white wine, water and some chicken stock. Threw in celery, carrots, onion chunks, a teaspoon of salt, then finished it off with some barley. One of the best soups I have ever had.

I got a smoked turkey on Tuesday. I'm starting gumbo with it today. Smoked meats last a good while.
