I think I'll start posting here more often as, at 27, I am just getting to the point I enjoy cooking/grilling. I usually season my steaks for grilling with salt/pepper but I'd like to try a simple marinade.

Anyone got any suggestions? I was thinking of trying a bunch of skirt steaks on the grill. How long on each side should these go?

Few tablespoons of soy sauce, some chile flakes, fresh squeezed lime juice, and a few smashed garlic cloves is good on skirt.

Don't normally marinade steaks, but since you said skirt, I like to marinate in a mix of soy sauce, honey and garlic.

Can you guys be more specific on the qty of each ingredient or do you just throw everything together?

Ingredients

1/2 cup dry red wine
2 tablespoons soy sauce
1 tablespoon Worcestershire sauce
1 tablespoon chopped fresh rosemary
2 large garlic cloves, chopped
1/2 teaspoon garlic powder
1 1 1/2-pound top sirloin steak (about 1 inch thick)

Preparation

Mix first 6 ingredients in 13x9x2-inch glass baking dish. Add steak and turn to coat. Marinate 1 hour at room temperature or refrigerate up to 6 hours, turning steak occasionally. Prepare barbecue (medium-high heat) or preheat broiler. Drain marinade into small saucepan; simmer and reserve marinade to pass as sauce (add a tablespoon of butter if you like). Grill or broil steak to desired doneness, about 4 minutes per side for medium-rare.
Transfer steak to platter. Thinly slice across grain. Serve with marinade.

Skirt is my favorite cut

2 parts pineapple juice
1 part soy sauce
1 part olive oil
throw in whatever seasonings you like - I use garlic, chili powder, cumin, salt, pepper, and cayenne.

Is this for a filet or skirt steak? Either way it sounds awesome.

Coupla suggestions. I like both of these, but the one with the corn is a special favorite of my family's.

2 tbls garlic powder

Top with Montreal Steak seasoning when you place on grille

I've used it on London broil, sirloin, and flank. Great on all three. Skirt is very similar to flank.

Also, the thicker the cut the longer you marinate. London broil = 5+hrs
