Did this originate (or perhaps more correctly become wildly popular first) in the South?

Nope been around for a coons age..... in fact coon was one of the first smoked meats.

Nope, smoking meat is an ancient practice, found nearly worldwide. Smoked, dried meat turns up in the archaeological record at least 12,000 years ago.

It's just one of the methods used when refrigeration did not exist. Same with salting meat to remove moisture which causes spoiling.
