What do you use to marinate ducks?

I made a gumbo with some last weekend and they were super tender and a lot of that game flavor was out. I brined them for about 24 hours in some brown sugar, salt and water. I just used the breasts, but I'm sure it'll be good for the whole bird as well.

I always have a little left over red wine in one of the fridges so I throw that in there with either soy sauce or worchestershire and seasonings.
