Render down some bacon, sweat some leeks down in the grease, add your cubed up squash, cover with chicken stock and boil with a sprig of thyme until it tender. When it's tender purée with a stick blender. Add a cup of cream, garnish with crispy bacon pieces. Serve.

I like to sweat a white onion and cook it down with some chicken stock and curry powder. I usually add a touch of cream and plenty of black pepper to finish it off

I roast the squash in the oven prior to incorporating. Then throw it all in the blender to smooth it out.

I am roasting right now, I think I'll throw in some garlic to roast too. Curry sounds good for it too.
Thanks!

How much curry powder do you use?

Usually about 2-3 tablespoons. I add it to the aromatics after they cook down for a few minutes. Usually just onions for this soup

Thanks. I'm gonna try that with a mix of garam masala and hot curry powder

Made mine as described above but I added about 1.5T of curry powder and a can of coconut milk after I puréed it. Turned out really well.

Bump for a big thank you, Bandit. Made this tonight. Served with some homemade beer bread. Dynamite ! Thanks again.
