Saw this at Sams today. Never cooked with it. What say the FDB?

It's pretty popular in Texas at authentic Mexican restaurants as a taco meat. It's called barbacoa. It has the texture of pulled pork but taste like beef.

If this is the same thing as cabeza, I love it. Have a little restaurant in the Texas town my in-laws are from, where I make sure to always get a cabeza taco with cilantro and onion. An absolute favorite of mine.

Barbacoa is actually the way it's cooked. Cabeza is head and cachete is the actual cheek.
Regardless if you braise it or just slow roast (Barbacoa) it's phenomenal as a taco with cilantro, onions, lime. Braised in a red wine beef broth and make a pan juice then reduce and serve over rice, grits, pasta...
