Habanero peppers - whatchya gonna do with them?

Ok, I've got a Congo Habanero plant I over-wintered last year. Plant is huge, and the Congo is a monster pepper.
Looking for something to do with the peppers, and I don't carry life insurance on my children.
As of right now, I'm planning to do a vodka infusion for bloody marys, tequila infused marinade for chicken, and I'm going to put some in the smoker. Any suggestions?

Do you know how to make a pepper sauce? Becuase somebody just gave me some peppers and i want to make some, but i dont know how. Do you just put vinegar in it? Maybe someone will explain that in this thread.

If you mean pepper sauce for your greens, then you are close enough. When I make mine, I follow a few steps:
1) sterilize jars and lids/tops
2) stuff cool jars/bottles with peppers (cut a small slit in your peppers for more heat), garlic and peppercorns. Okra if I got it to eat later.
3) Boil a mixture of cider vinegar and water. Let cool for a few minutes.
4) Pour over peppers.
5) Seal and leave alone for about 3 weeks.

I have a pretty big plant now. My wife will use them seedless in some one-pot dishes. I could make pepper sauce, but that's kind of a "one-trick pony".
