Difference between black eyed, purple hull and field peas?


I have grown to love Black Eyed Peas as one of my favorite vegetables, especially when a good hot sauce is applied to them.

I see people sell purple hull and field peas that look just like black eyed peas. Is there a difference or just people using a different name?

Someone will ask "How do you live in La. and not know about these peas?" I am Indian, but a U.S. citizen.

purple hull are my favorite, I believe they are the same as field peas. Black Eyed peas are smaller and also great just the way you described.

I was actually about to make a thread asking where around Baton Rouge I can get purple hull peas? My grandpa used to grow them and they are awesome.

Are the same as field peas though? I didn't know that if it is true.

I think that purple hull is the same as field

and they are my favorite

all different but similar, just like beans there are multiple varieties of peas

Black eyed peas have always had a very bold, almost briny undertone in my opinion.

Field peas taste a bit more fresh and lively.

They're all excellent though.

Purple hulls are field peas and they're my favorite also. I think they're smaller than black eyed peas, though. Purple hulls have more of a green tint than black eyed peas.

I find that the purple hulls don't turn to slop as bad as black eyes. I like this because I love dipping my cornbread into the pot liquor, which goes away if the black eyes burst and get the consistency of refried beans.

PHs seem fresher, and are never dried. sometimes you can find them frozen. Absolute best IMHO.

I think it's mainly shape:

Peas are round
Beans are oval (kidney shaped)
Lentils are flat

I'm sure someone else can give a more specific answer.

They're both varieties of field peas as opposed to green (English) peas.

Pink eyed purplehulls and black eyed peas are very similar when eaten fresh. Alot of black eyes are dried, though, and form a thicker texture when cooked.

I think they're all the same species (field pea) but just different cultivars. It's like asking if a Granny Smith and a Red Delicious are the same thing. They're both from the same type of tree that can breed with each other, but they're different varieties.

It's been a while since I read that chapter in "On Food and Cooking", though, so take it for what it's worth.

Red stick farmers market downtown is the best place to pick up fresh purple hulls. Picked some up last Saturday morning. Cooking them tomorrow as a matter of fact.
