Played Jak & Daxter II back in the day. Apparently it is considered very difficult, although I never found it that way.

God, I love that game. I did finish it, but it was a tough one. I stupidly traded it in a few years ago. Wish I could go back and play it now. I might have to look up how well that one is emulated on PC.
Super Meat Boy is pretty tough, especially the Nightmare levels and Cotton Alley
Ikaruga is tough.
Both the NES Ninja Gaiden and the Xbox Ninja Gaiden are tough games.

Jak II has some challenging timed missions that are frustrating and cheesy, imo. Once you get past the handful of those, it's really not that difficult of a game, like you said.
