EMP is too tall.
Height is very important. I carry in my boot sometimes and too tall of a grip makes the gun hard to fit. Ruger SR40c looks good too.

Yep. The SR40c is a double stack.
But it is nearly dimensionally identical to my SR9c. The only real difference is that the slide is slightly beefier. So that may add a little less than an inch in height.
I think the XDs or Shield will do the trick just fine. I also really like my Kahr CM9, which is also made in a CM40 and CM45. But it doesn't have any safety features - just a long trigger.

I know no one buys those for range guns, but size matters for ease of use. Seems like if you were going to get into a shite situation armed you'd want something with a positive grip and super easy controls, or at least something you've practiced with a ton.

If by this you mean the gun should have a grip safety, ala the 1911, then your choices are basically limited to the Springfield XDs series or the 1911. To get a light weight 1911, you'll have to go w/ an alloy frame. Doing so will cost additional $$. I know that Kimber and S&W make alloy frame 1911's and I'm sure there are others.
If indeed the safety issue is negotiable, you can look at the S&W Shield (no grip safety), Beretta Nano, Kimber Solo, Ruger LC9 and Walther PPS. The Kahr series (CM9, CW9, CW45) would be good choices except they have neither an external safety lever nor a grip safety.
I handled my first XDs (it was the 9mm) last Thurs in Monroe and was impressed. It fit my hand very well. Looked like a quality gun. The blued version was $600 while the bi-tone was $660.

The XDs would be perfect for you. No manual safety, but it does have the grip safety and the trigger safety.
