Need Suggestions on Rainbow Trout

Buddy gave me a frozen bag of Rainbow Trout. It looks like smoked is the way to go. Any advice? Thanks

I like to simply put some butter and lemon pepper on them, wrap in foil and cook outside on grill. Simple but good.

Brush with olive oil and squeeze a little lemon juice. Sprinkle liberally with Cavendar's Greek Seasoning. Broil or Grill.

I've done the Zea pesto crusted trout at home. Spread the pesto on one side and cook that side down first. I use a non stick skillet for this.
I also slice small red potatoes very thin on a mandeline. Layer on the fish like scales. They'll stick together. Season with whatever you like. I use Cavender's or Nature's Seasoning. Cook scale side down first in a skillet with clarified butter. Season the other side of the fish and turn after the potatoes are golden and a bit crisp. Cook on the other side a few minutes til done.
