Trout Recipes?

Went trout fishing this past weekend. Caught alot of rainbow and brown trout. Just wondering if any of you guys have any good recipes out there. TIA

Anyone have a butter poached recipe? Looking to mix it up and that technique not in my repertoire

My favorite way is just a simply recipe.

Filet but leave the skin on ( don't forget to remove the line if small bones the run parallel to the backbone with two small cut above and below then pull out the meat with the bones).
Coat the filet with a little salt and pepper and thyme. In your pan melt a little butter and put the filet meat side down for a couple of minutes and flip. While its cooking on the skin side down add lemon juice.

That's it. The thyme gives a awesome flavor.

Another is to smoke a whole trout until its done. Take the meat and mix with cream cheese lemon and dill.

Take trout put in microwave safe dish butter, pepper, salt, and lemon. Microwave on high for 4 minutes and enjoy.... Awesome and easy.........
