Looking for something different to do with crawfish tails

Loaded up on some tails when they were on sale. Need some good recipes. Something different

Fry them, then make a salad.

Make a buere rouge sauce and toss the crawfish in it. Then use that to top a filet. Delicious. Filet buere rouge is an all time favorite of mine. Not my idea admittedly - thank mike at maison lacour.
