skill vs skill games are almost never boring if you play with friends or get involved in the scene.

Just like with sports, once you understand the game (techniques, strategy, mental game, etc.) and the people playing them, fighting games become really engaging and a ton of fun.
It takes dedication to learn them, though. Much more than your typical video game.
