Got any ideas for new dishes?

Fried corn maque choux patty is mine, but I don't know how to create it. And what kind of sauce to go with? Remoulade?

Seeems to me that making something along the lines of a boudin ball or a hush puppy thing would be the way to pull it off.

It's not like the world needs more fried food. But there are boudin balls and rice dressing balls, why not fried maque choux? With a tasso cream sauce!

Add cornmeal and flour with egg to make a fritter, maybe? Not sure how the tomato would hold up, though.

Agree with a fritter type thing or make a corn cake similar to a crab cake. I would drain the tomatoes and only use the "meaty" part, scraping the seeds etc...out before chopping.

Sounds good to me.
