I had this salad at a friends house last Christmas Eve. His wife (in his words not mine) "fresh off the boat" Italian. She said it was very traditional and served every year. It had octopus, pinoli, slivered marinated onion, olives of different type, as well as a litnay of other ingredients. And thats where the problem lies. I can prep and cook the octo but what are the other ingredients and what is it dressed with? The friends are divorced and she lives in Washington state now so I can't ask her. He's a little challenged in the kitchen and has no clue. I hit the Google machine up for the info and two problems popped up. 1 most of the recipes are in Italian and 2 the ones I could read didn't seem to have the same ingredient list. A lot had pomegranite seeds in them and hers did not. So can any pisan or pisana help me out?

You are trying to recreate a salad that was probably never written down in the first place. Italian cuisine is an incredibly regional if not sub-regional and familial cuisine.

Do you remember any of the other ingredients? If you cant you are just going to frustrate yourself, trying to recreate something you will never be able to do. Or you can email the ex wife.

Yeah too late! I've been thinking about that damn salad since Thanksgiving. I can probably come pretty close with the rest of the ingredients but bet I'd never get the dressing/marinade right. Damn I hate good food!

The marinade/dressing if it is really off the boat Italian was probably simpler than you can imagine. Maybe some fresh squeezed lemon juice, sea salt, pepper, maybe some dried chili flake, and really good olive oil. Perhaps red wine vinegar; maybe some oregano or dill. I'd bet on that being the dressing.

My mother used to make it before she passed. I can't remember exactly what ingredients she used for the dressing. I googled it and Mary Ann Espositos Christmas Salad dressing looked very close. Also add shrimp, squid and mussels.

Nah while the addition of shrimp and mussels sounds great the only protien in this one was octopus. A lot of veg and the perfect blend of spices in that olive oil based dressing. I bet its like Blackened said and it was passed down to her from generations back.

Like that perfect day back in the spring of '84.....ITS GONE!
