I went to an Asian buffet in Houston next door to my hotel, and a health inspector made a surprise visit as I was eating, which trumped the crossword puzzle I was working on, so I checked out what he was up to. He had a couple of thermometers that he would poke into the pans of hot food, wait a few moments, and then the owner and another worker would methodically take away those pans to the back, meaning they weren't acceptable. After about fifteen minutes, virtually the entire buffet was wiped out except for some fruit fluff and almond cookies.

ate there Sunday for lunch for the 1st time in 8 years..... (pun intended)
on a side note, I knew an inspector from NOLA and he will not eat at a lebanese restaurant that has the meat cooking on the upright ritisserie because he claims you cannot get an internal temperature. he was also an OCD Germaphobe.

There is an overwhelming lack of health standards adherence in a restaurant it ain't funny. In Lousiana there is simply too few inspectors to adequately inspect them all adequately. Those places that can afford it have a staff whose job is to keep as much of the back of the house clean. One place I worked at the stewards once per week would clean every nook and cranny of the kitchen, they even polished the copper piping. Mike Andersons used you have a "bug night" where all of the service ware was covered with tableclothes so the exterminators could run through the house. Louies is a tradition to most, but shutting the doors maybe twice a year isn't doing a damned thing in the grand scheme at al.

Good. It's just another unnecessary government function. If a restaurant is full of rats and roaches, don't eat there.

Do you know HOW to tell if a restaurant is infected with anything you dolt? I don't think you have a clue at all. What are you looking for, and where are you looking for an infestation of one kind or another? YOu must think the FDA has no place in the world anymore, as you are able to defeat any and all food borne diseases with your incredible knowledge.

CIT, I was going to reply as well, but it sure didn't seem worth it. tom probably doesn't find the need for building, automobile or aircraft inspections either.
