Butter without a doubt, it has been around for a while as a mechanism of flavor conveyance from the volatiles of foods around the world regardless of the source of the "dairy" product.

Butter. To me it seems a lot easier to mange when making compound butters and gives a better flavor.

Well, ended up using Oleo one of the guys with us was allegic to butter so it made the decision very easy. I tasted little difference. In fact saved the left over sauce and oysters and did the dish again at home tonight and it was even better than two nights ago. It was frigging awesome.
