Fine dining question

When I watch shows like Top Chef or other food shows, when showing fine dining resturants, they stack all the food on top of each other, why?
I'm not one of those people who can't stand their food touching, but I just don't understand why
"presentation" means stacking things up.

because the plate is supposed to be cohesive, all parts complimenting the other

and they don't always stack

I worked with a guy for a couple years that absolutely hated that. Nothing ever left the kitchen stacked. He would always say "We're not going for altitude here."

I've never understood it. Why put the filet on top of the potatoes? I'm just going to move it off as soon as I touch it.

It's not all fine dining restaurants that do this.

I think it is all about presentation.

it looks better than just sitting the filet next to the potatoes

*note: I don't think I've ever had a filet stacked on top of potatoes though

I don't necessarily have a problem with it, but I think it's just the "in" thing to do in a lot of restaurants. I get the idea, but some places really go out of their way to stack items that don't need it.

Its not really an "in" thing. Tournedos rossini is a stacked dish and that is about 200 years old.

Agree. Some foods make sense being stacked up, but not all.

I cannot STAND potatoes touching any meat. I think meat mixed with potatoes is gross.
