Anyone use John Folse's Cajun Encyclopedia for recipes?

As a non native, this book has really helped me step my game up, particularly with sauces. Anyone else use this book?

It's beautiful and I love it, but I view it more as a coffee table book. Kinda hefty to have in the kitchen. I'm sure other people actually cook from it.

Holy shite that recipe sounds awesome. I have been doing tenderloin a lot recently. I will have to try that

I use the chicken and sausage gumbo recipe in there fairly often...Always a crowd-pleaser and it makes about 2.5 gallons of gumbo!

I have used it for stuffed mirliton. also it is pronounced, mil-e-tahn.

I cooked one of the Jambalaya recipes yesterday for 80-100 people...came out AWESOME!

I bought the CD-Rom when it came out so I have it as a PDF file on my computer and on my phone. I love it

Honestly..

As a native Cajun I like the book as a story of Louisiana History.
But the few recipes I have tried have been awful.

Please avoid the hush puppy recipe.

The recipes are a little much.

Ive only done two from hl&a but i had to get so many extra groceries that it immediatly became a book i limit to 1-2 times a year.

I did make a killer butter mix for an en papillote recipe. I used the extra mix in everything, very versetile.

I used the recipe for Braised Round Steak (or something similar - I don't have the book in front of me). It's great as written and can be modified to use with pork or chicken as well. I love some rice and gravy.

I've got Besh's My New Orleans and it's as good as advertised as I think most would assume it would be, but have yet to get Folse's book.

What hits and what misses would you say?

I was thinking about getting either that one or the Keller French Laundry book eventually.
