Anyone got a good beignet recipe?

I havent seen any mix in the local stores so I was hoping someone has a recipe that I can make from scratch. TIA

Go to rouses or whatever and tell them you want to buy a French bread still frozen.
Take it home and let it defrost completely, but before it begins to rise, slice it up, stretch out the slices a little, and fry them.
Makes perfect beignets.

another good option. simply crack a can of biscuits. Slice um up how you want um.. i usually just cut each hunk of biscuit dough in half. Fry em up. They fry real quick right on top of the grease.
