Cracklins / Gratins: long skinny ones vs fat cubes

Personally I much prefer the skinnier ones as they seem to be crispier

The cube shaped ones seem to not cook as well and they can get too chewy in the middle


What are your opinions?

And who in the BR/Lafayette corridor makes the best IYO?

Ronnie's on Florida Blvd are awesome.

Smoked boudin is my favorite from their.

Skinny crispy is best with a little fat.

As far as asking where's the best between Lafayette and Baton Rouge misses out on the good stuff. Don's and The Best Stop, both off the Scott exit just West of Lafayette are great. As far as the other side of the basin, the BR area just does not have good cracklins.

I prefer the skinny ones.

The best I've ever had were from The Rice Festival in Crowley.

I don't care about the shape, I just want them to be freshly cut off the victim and thrown immediately into the hot grease, So in other words fresher than you can think.

Both are great if fresh. I like the thick cut if the fat is still hot that it pops in your mouth. Otherwise it just gets too dry.

I'll eat both, but the ones I had this week from a place in port allen had too much seasoning

I don't know the name of the place but it's the 1st exit off the basin bridge headed west. It's in front of the Landry's next to that gas station. They fry them to order.

Seasoned but I dust it off a bit. Seems like when its salted only its way too salty most of the time.

As I said above it is all about the timing between getting them off the pig and into the grease. I think that I could convert an orthodox Jew or Muslim with a few nibbles of still hot ones in front of them

Billys is in the Opelousas/Krotz Springs area. The place you are talking about is Dons. Which make good cracklin and are more consistent than Best Stop. However Best Stop is better if its fresh.

Dons is just a new location from the family from Carencro.
