I was about to open a box and eat some, which got me to wondering how they make those little things?

And in case you're wondering, there are 1,206 in the standard size box. Yes, I counted.

To make Cheerios, the dry ingredients are first mixed with water resulting in a raw batter that will eventually become the familiar O-shaped cereal. Cheerios get their classic shape when the batter is pressed through special molds. Each tiny circle is then put through a drying process. Following this drying period, hot steam is applied to the cereal in a special pressure cylinder. When the cereal is removed from the high pressure cylinder and returned to a normal atmosphere, the water inside turns to steam and causes the Cheerios to puff up. At this point, the cereal is almost done. A little more drying time, as well as the addition of sprayed on vitamins and minerals, completes the process.

Watch some food processing technology shows on the tube, they will give you insights as to how much mechanical manipulation is involved with what is bought at stores. All of the "puffed" grains that re in breakfast cereal boxes are cooked under a small amount of pressure which is then released in a second. PUFF happens. Dheerios are being extruded from a tiny orifice similar to that which makes "cake" doughnuts. A tiny amount of batter, as to the method of cooking, I don't have a clue, but I would go with a flash baking process.

Is this both fascinating and slightly disturbing to anyone else? I have to admit, I've never put any thought into the process of clear-coating Riboflavin.
