I was at an out door cook off yesterday. This guy had the coolest Portable Cochon de lait box. The frame work broke down to fit in the box. I asked the guy where he got it. It wasn't his but he knew it came from Marksville.
I would love to get one of these. Does anyone know who makes them?

The LASAS school outside of marksville might have built it.

La Caja China

This thing is amazing. Cooks a pig in a little over 2 hours. And I guarantee it will be the best meat you have ever tasted.

That's just the same thing as a Cajun Microwave.

This is completely different from a coon arse microwave. All you are doing with a coon arse is cooking it in an oven that is heated with charcoal. This is portable and cooking the pig over an open fire. The taste between the 2 are completely different and shouldn't be compared. This rig that he has posted cooks a much better pig.

Chadg do you have any contact info for fab-tech? I googled them and couldn't find anything. I really want to get one of these. Thanks!

really is a pretty damnn good idea...very compact and the reflection of most of the heat towards the hog should cut back on the amount of wood used...

ETA: Bakersman is from Marksville, catch him posting and I am sure he will know who makes them...

as far as I am concerned, something like this is really what is needed to bring back the popularity of the pig roast....I haven't done it in years because I just don't want to mess with all of the swingset frame, etc. and spend $400 on firewood trying to get the thing cooked...

I'm still amazed at how simple it is. The frame work fits in two holes in the top of the box. Then an adjustable bar holds up the front. The rotisserie moves in and out to adjust the pigs distance from the fire. Setup time 3 minutes max with one guy. It all collapses and fits in the box. You could put four in the back of a pickup.

Nice looking rig. The Cajun microwaves take all the fun and good flavor out of a hog roast.

The owner duck hunts by us n Jonesville. Yes, he is from Marksville...... And had it made. Lets people borrow it. The motor on top runs off 2 "D" batteries - found at most hardware stores.

Ive eaten from that very same cooker. Small world.

Try 318-985-2203. Fab-tech is located around hamburg. I have seen the ones he's made and are extremely similar to that one.
