Side dish ideas

Cooking up some catfish filets served over rice and topped with an etouffee for a few out of state friends -- if i were by myself, I'd eat it straight up, no sides. No idea what to pair with it. F&D Board, I defer to your wisdom. Any ideas? TIA.

Well, since rice is your carb and fish is your meat, I'd go with a veggie. Any kind of beans would go well. I'm partial to steamed green beans.

slice some onions and cucumbers, season, cover with bout half and half vinegar and water, let em soak overnight in tupperware..

Agree that a green salad and French bread is really all you need with that. With spicy food, I like to do a light vinaigrette with some red onion, strawberries or orange slices, feta or goat cheese, pralined or roasted pecans, almonds or walnuts, maybe a few thin sliced red onions over romaine or mixed greens.

If you want a green veggie, greens, green beans, asparagus, spinach etc... would work.

I don't understand the concept of burying meat or fish with a good etouffee, myself. I'd serve them separately, so the flavors aren't mixed and the out of towners can get the enjoyment out of both the crawfish and the catfish, separately. The other way makes me cringe. I usually do my best to scrape off the etouffee and eat it alone. I tend to leave the fish and meat. Just me, though.
