Making Perfect Crispy French Fries at Home

For years I have struggled to make perfect crispy french fries. Finally I stumbled upon the secret.

Here is my method derived from the above link.
1. Peel and cut russet potatoes, thin or thick cut.
2. Soak for 30 mins in iced water.
3. Heat oil ( I use LouAna Southern Frying oil) to 325f.
4. Rinse and pat dry the fries and drop into hot oil for 1 -2 minutes. When the fries start to float, that's the indication to remove them from the oil.
5. Put partially cooked fries into freezer for 30 mins. (Fries can be stored like this for weeks/months)
6. Heat oil to 350f for second frying.
7. Drop frozen fries into hot oil, fry till golden brown.
8. Remove fries to paper towel to drain, salt/season to taste, serve.
I have had success with this method every time.
Recipe follows: French Fry Sandwich
Prepare French Fries as above.
Take two slices of white bread, generously butter one side of one slice, ketchup on the other slice.
Load buttered side with fresh fries, top with other slice and enjoy.
Pair with beer of your choice.

I don't put them in the freezer, but I fry, let them cook and refry. Crispy every time.

I don't like French Fries. Never have. But my wife loves them and so do the dogs. Gonna use this recipe as a treat for them. Thanks.

Great idea to put the fries in the freezer I never wouldve thought to do that. I also find if you drain the fries on a baking rack inside of large square baking pan instead of a paper towel they are even crispier. If you leave them on a paper towel they just sit in the oil.

Similar to the pommes souffles at Galatoire's that puff up so perfectly. I understand the secret is to discard the ones that don't puff up, the same as you would do with unpopped popcorn kernels.
