Sounds great. Maybe think of adding more veggies: onions, celery, maybe rice. GL.

I made stuffed peppers last night. I always use poblano peppers. I think bell peppers are just too bland.

Agreed, but I have some bell peppers I need to get rid of. Was thinking bread crumbs, yellow onion and cheese (mozzarella? provolone?)
Never made them before and the aforementioned ingredients seem too traditional/boring to me. Having trouble coming up with something creative.

I saute yellow onion, celery and peppers. Add diced tomatoes and tomato paste and a little water. I also go 1/2 cup of rice and 1/2 cup of quinoa. Cheddar cheese on top.

cut open bell peppers and remove seeds and core. parboil in salted water for about 10-15 minutes.
A little onion, bell pepper, garlic, green onion sauteed in butter. add small dice ham. add chopped shrimp. add a small amount of stock, add breadcrumbs and parmesan cheese till right consistency, salt and pepper to taste. stuff peppers and bake in oven for about 20-30 minutes.
