Red beans and Smoked Ponce?

I was wondering if anyone ever tried substituting sausage for a smoked ponce in their red beans and rice dish. I had the inspiration to do this recently and was hoping someone out there could give feedback on their experience.

It's just a big arse sausage with a stomach as the casing.

I think pounce would probably fall apart if you cooked it for as long as you cook hamhocks, tasso, andouille, and sausage.. But it may be pretty good cooked and served on the side, as a main meat dish. That being said, I wouldn't want to miss out on the delicious gravy it makes..
