I've been there a few time and never got to fly fish for rainbow trout in the mountains but it is something I would love to do and I know there's plenty of places to do it.

Go to Hartford and zipline, my wife and I did it this summer and it was fun.

Plus you can get out of the tourist trap and see the mountains.

ETA: Get up early and go hiking. This will keep you away from the crowds. This is the busiest time in the park.

Smallmouth fishing is good this time of year. They will be in the pools.

Go see the elk herd that is in rut in Cataloochee Valley, North Carolina side of the park. There are some very nice hiking trails as well in that area fall color is incredible there right now. It gets busy but nothing like TN side of park and the road to get there is narrow just take it slow.

Warning Cades Cove is a traffic nightmare, bears are still active on roadsides and that will cause the world to stop.
