Sides for a ham...

I am drawing a blank on what to do for sides for a ham...Trying to think outside the box here, and not go with your typical "New Years" type sides like black eyed peas and cabbage, etc.

Any ideas?

...baked beans.. BTW if you want to cheat, Bush's Bourbon/Brown sugar Baked Grilling Beans are pretty good

I was gonna nix the cole slaw idea since we usually do that for New Years - My SIL is fast forwarding the ham and doing it for Christmas this year instead of the 1st. I may just do cole slaw, black eyed peas and sweet potatos and say screw it to trying to be different.

I would have put them on a paper towel to set so there wasn't so much grease on the plate, but I've never thought of adding purple onions either.

Me too on the mac & cheese, and (HOPEFULLY) me too on the not pregnant!

Seriously, I usually do homemade baked macaroni and cheese with ham--I fix it ahead of time and then heat it just before serving.

Asparagus is good with it too.

My sis-in-law is bringing ham and I'm also making a baked mac and cheese to go with it.

I want to make corn grits, but I don't think anyone would eat those. My husband isn't a fan. I love them, but I don't need to eat them! However, I am making grilled shrimp, so maybe it could work.

Those green beans look incredible.

I think I am going to do the mac and cheese..

I'm still leaning towards something green as well..So maybe those green beans wouldn't be a bad idea. Guess it's better to keep it simple with a ham.

This is so awesome, even people who say they don't like sweet potato will love it:

Scalloped Sweet Potatoes with Apples and Raisins

1 Tbs unsalted butter
3 tart apples, cut into small pieces
2 Tbs brown sugar
2 lbs sweet potatoes, also cut into small bite size pieces
1/2 cup golden raisins
1 1/2 Tbs flour
1/4 tsp cinnamon
1 cup chicken broth, fat free
1/4 cup chopped pecans

1. Preheat oven to 350 and spray a 9 by 13 cooking dish with Pam (or similar).

2. Melt the butter in a medium nonstick skillet over med. heat. Add the apples and stir, cooking for about a minute or two until the apples start to release a bit of juice.

3. Add the brown sugar, then cook for two minutes until the apples start to get soft. Place the apples, sweet potatoes and raisins in the baking dish.

4. Now, place the flour and cinnamon in a small bowl. Whisk in 1/4 cup of the broth until it all dissolves, then add in the rest of the broth and pour the whole thing over the fruit and into the dish.

5. Cover loosely with foil and bake for one hour, then remove foil and sprinkle in the pecans and bake a few more minutes until the pecans are toasted.

Hash brown casserole

2 lbs. frozen hash browns, Southern style (thawed)
1 stick melted butter
1 tsp. salt
1/2 tsp. pepper
1 can cream of chicken soup
1 pt. sour cream
1/2 c. chopped onions
10 oz. pkg. shredded cheddar cheese

TOPPING:

1 c. crushed corn flakes
3 tbsp. melted butter

Preheat oven to 350 degrees. Mix all ingredients. Arrange in baking dish, 9 x 13 inches. Sprinkle with corn flakes. Top with butter. Bake for 1 to 1 1/2 hours.
Serves 8.

Have you made this one without the corn flakes? I'm not a big fan of corn flake toppings but to get that crunch - maybe we could use bread crumbs instead? What do you think?

Yea, it works with any type of topping. Also saw a variation on here last week where someone added crumbled bacon and green onions and used potato chips.

I've had that hash brown casserole with corn flakes before...it's very good.

If you replace the corn flakes with bread crumbs, I think I would mix the melted butter with the crumbs before sprinkling them on top. My reasoning: bread crumbs by themselves can be kind of dry, and if any spot is missed when you pour the melted butter on top, it might be kind of dry too.

Good idea with the bread crumbs and butter..

I think I've now switched gears again and want this hashbrown casserole as well as the sweet potato one

As GRITSbabe said, you can use potato chips too and it comes out good.

Hmm...you guys have got me rethinking my Christmas dinner plans! We usually do something simple and casual, so this would be good.
