Tailgate Food Ideas

My group has been tailgating for a while and feel like we have run out of new things to cook. We have done all the standards this year: hamburgers, jambalaya, pulled pork & red beans. Any one have any ideas for a menu for Bama?

They have many different names. It is basically a jalepeno cut in half lengthwise and cored out. Then stuffed with cream cheese, shredded cheddar and some kind of sausage (cocktail sausage, deer sauage or even shrimp)then wrapped with bacon and grilled. I baste them with a sweet BBQ sauce as they cook.

We do one game each year with fried foods like chicken/chicken wings, fish/seafood, fries, onion rings, okra, etc. We'll fry just about anything.

I use duck breast instead of sausage and call them duck poppers.

my goal this year is to cook without the grill.

we have done the fried food fest, pastalaya, etc.

My favorite thing so far, and I got weird looks for this, was soft tacos. Just some ground beef and tortillas like you would make at home.

Ran through about 20lbs of ground beef before 3. Very easy and goes over very well. They have been requested again.

Give it a shot. Just need a way to keep the lettuce and cheese cold.

Bring your charcoal grill and a pizza stone. Make the dough the day before and make enough to have a bunch of different pizzas. Or buy the small already made dough at the store. Cut all your vegetables and put into ziploc bags. Brown all meat and do the same and put in icechest. Don't forget cornmeal and a pizza peel which you can get at Wal Mart. Make one or two at a time with different toppings. Tell the people coming to bring their dough and toppings as well to make it go longer.

We did about thirty pizzas at the Tenn game and about six or seven people brought different stuff. Just keep a hot charcoal fire and scrape the burnt corn meal off the stone before putting the next pizza on.

Buy a good red sauce and a good pesto so you have different flavors.

You will be king of the castle.
