How to Make Armadillo Eggs...With Pictures!

Ingredients:

2lbs of Jimmy Dean Breakfast Sausage
5 large fresh jalapenos
Cream cheese of your choice
20-25 strips of your choice of bacon
Sweet BBQ sauce

First make a "boat" out of the jalapenos and scoop out the insides, then rinse with water.



Stuff with cream cheese


Take 1/5 of the sausage and make a depression or hole in it. Put in the stuffed jalapeno


Then wrap the sausage tightly around the jalapeno, making sure the stem sticks out (this is the "tail" of the armadillo)


Wrap with 4-5 slices of bacon. If you wanna use more, knock yourself out.




Then you throw them on the grill or in the oven at 350 until they are done...

i like to add a bunch of stuff to the cream cheese mixture, then smoke it.
