Charley Strong, almost certainly unavailable. Vic Koenning, Clemson: he's had them ranked in the nation's top 20 defenses since he took over in 2005 (I know, they got whupped by Bama earlier this year, like one game makes a career). Oregon State's also had good defenses the last 2-3 years, so maybe that DC would be worth a look (hey, they kept 'SC in check).

My list begins and ends with John Chavis, and if Fulmer takes a year off I feel confident we could get him if we wanted him.
Some other names I'd certainly be happy with ... Gene Chizik, John Tenuta, Nix or Strong (highly unlikely although Nix could be swayed because a DC spot at LSU and national title as such would certainly would lead to a head coaching spot quicker than Ole Miss).

He is at Georgia State with Bill Curry. That being said, I would think he would be available.
edited to add: Georgia State apparantly won't field a team until 2010.

Solid choice, but ... well, his boys have been thrashed by Florida the past couple years, and if there's one thing I'm looking for in a DC, it's a guy who has ideas on how to confront a spread offense. I know, Florida is just one game, one team, but if we can man up against them, we should be in good shape to deal with other teams.
Like it or not—and I hate it—Florida is the gold standard in the SEC at the moment, and we need to be competitive with them to have any hope of winning the SEC and getting back to the mountain top. I'd certainly talk with Chavis, but I'd be pretty blunt in asking him about his thoughts on how to contain today's "player in space" offenses.

I certainly agree with this (and stopping the spread has been our downfall this year and last), but unfortunately the spread offense being used "exclusively" by teams is so "new" to college football, I doubt you'll find anyone with any sustained success in stopping the spread.
The best defense against the spread is the spread itself. Give itself time, and it will burn out because teams will not have sustained success with it in my opinion. You live and die by it, and most teams that run it stand-alone end up dying by it at some point in a big game (and this includes Florida... see last season and Ole Miss this year).
