What else to put in with pot roasted ducks?

I have celery, onions and peppers, all sautéed in bacon fat, and I browned the ducks for about 35 mins prior to that. I added some chicken stock to get some liquid in there... Anything else I should add? Sausage maybe? It's gonna cook in the oven at 350 for about 3hrs.

Duck bombs (bacon japeno and cream cheese) on the grill or fry duck fingers. Assuming it's wild duck if not it may be ok in a pot. I never had roasted wild duck that was good.

I agree with the mushrooms and garlic. I also like to add fresh-sausage in the cavity and cut a jalapeño or two as well.
Sweet potatoes, with wood ducks especially, is a favorite of mine.
You're already ahead of the game with the bacon fat and stock, in my opinion.

If you never had good roasted wild duck, you should try what the OP has posted. Brown the ducks very well then deglaze with the vegetables and stock and/or wine before finishing in the oven.

I added some garlic and red wine per yalls recommendations, and some smoked pork sausage and carrots. It was pretty awesome. In my experience you gonna cook wild ducks either real short or real long. I had them in the oven for about 3 hours.
I'm gonna try the sweet potatoes next time. Been a crazy year, buying a house, selling a house and having a kid for the first time. The houses have been more work than the kid tho. Haven't had the time to cook like I like to so I still have a handful of ducks in the freezer. Cheers OB

Some of the best pot roasted duck I've had was made by an old lady from Cameron. She diced turnips and cooked then down with the ducks.
