What are we going offshore for now that snapper is closed?

Amberjack is open, but they aren’t that greet to eat

Grouper?

Queen snapper? (Don’t know how to catch these)

Blue water trolling for wahoo/mahi?

They just don’t freeze that well. A limit of amberjack gets wasted if it’s not eaten within a few days

Also, if you are worried about it "going bad" just make a smoked AJ fish dip

Our local gulf waters are 90*. Grouper bite is super slow right now. The mangroves and yellowtail are very spotty on our numbers. We have to go 30 miles to hit 17 fathoms, so it’s not worth it.

Went to Pinellas Reef (10 mile) on Monday just to catch some Cudas. There were a million jellyfish, anywhere from 8” across to 20”. Massive and scary! Managed to score a couple mackerel for the crab trap as well.

Are people catching tuna yet? With the forecast this weekend it could be a good chance to go pretty far south.

Make sure you cut out the redline (or any red) before freezing it. Vacuum seal it. Keeps for a good while.


For cooking when fresh:
- Sliced thin sashimi (think yellowtail)
- Poke bowl
- Grilled medium
- Sliced 1" thick and blackened

Later on:
- Grills/Bakes well
- Smoked Dip like above (smoke it, shred it, light mayo, olive oil, jalapenos, purple onion, cilantro, salt pepper etc to taste)
- Smoked dip done in a food processor (many options online)
- Hell, fry it

Never had an issue freezing AJ fillets. The mate would clean everything on the dock, we'd put them in ziplocs and into a cooler. Back at the condo we would put salt and water in the gallon freezer bags and freeze Amberjack in that. They would keep several months. Thaw it out in a sink of cold water and grill them.

Amberjack is one of my favorite fish to eat. If you keep it cold and vacuum seal when you freeze it then it keeps just as good as anything else.

I only keep AJ so that I have something to give to people who beg me for fish. They ain't getting the yellowfin tuna or grouper.

I pretty much smoke all the redfish and amberjack I cant eat when it’s fresh. I make a smoked fish salad (like a chicken salad) or a smoked fish dip. It’s a great way to cook fish that has been frozen.
