tuna and Lemon fish

I have some tuna and lemon fish from the weekend, now who has the best recipe for each?

Food board you would probably get more responses.

Lemon fish is good fried or grilled. I prefer to cut it up in small pieces and fry. It's also good grilled. Tuna is only good seared or grilled. I like my tuna best by using a little olive oil in a pan on medium heat. I just sprinkle some creole seasoning, garlic, onion powder, etc and cook it in the olive oil. I don't usually smother my fish with a sauce but everyone is different.

Yeah i tried over there, I guess i'm looking for more of a marinade, I'm going to grill them both.

This, Cobia grilled is one of my favorites. Tuna, not so much.

Marinate in fresh lemon juice and lemon pepper. Thats what I mostly do for mine...easiest for me. I have also marinated in a wasabi sauce that always turns out pretty good. Whatever you soak it in, it will definitely absorb it. Basically whatever you marinate it in, thats the taste you will predominantly get. Enjoy!

Both Tuna and Lemon fish are on the DO NOT EAT list currently, officals are asking to please bag all fish and turn it in, so please just put it ina ziplock keep it on ice and call me and I will take care of getting it to the right place

hmmmm.....we served lemon fish all weekend at the resturant where i work, hope it was OK. As for how we cooked it, the first night and second night used blackened seasoning and grilled and the next night marinated in our house dressing and hit with tony's before going on the grill.

Grill both.

With the tuna get your grill to 600+ degrees and grill on each side for 45 seconds. No more.

Cobia, I like to sear it on either side then shut the grill down and let it finish. About 3 minutes depending on thickness.

By the way this is on an Egg. And I cook a filet the same.

cobia=lemon and a pat of butter in over or on grill with seasoning

tuna- fresh tuna is king. sear outside ONLY to kill bacteria on outside(until outside is white on all sides) about 15 seconds on each side. the middel of the steak should be cold.
soy sauce and wasabi for dipping
