Cutting wood, pond stuff, clearing brush, shooting stuff, stalking hikers, bird watching, hiking and been doing a good bit of camping this year.

Hiking doesn't sound that engaging though and my wife is from NJ. Hmm, interesting those were the first two responses though

Depends. It can be. I love hiking but prefer a little elevation. Not too much, but a little.

Murder. Sweet delicious murder of various creatures in nature and eveything in entails from stalking, tracking, setting up blinds, scouting, shooting for accuracy, shooting for range, etc. Hunting deer or waterfowl can be a rewarding experience in many ways. Bonding with nature is the ultimate, especially in adverse climate. Harvesting and animal, them breaking it down, then seasoning and cooking for your family is a very rewarding experience and can be done with your SO every step of the way if she likes the outdoors. Another suggestion is just getting into shooting. Its always great to get women into shooting as they need the personal defense more than men do and it can really boost confidence and be very fun in the process. You could also cook meth like some of the others said. Lemonde stand would be badass too. Hell you could sell lemonade, meth, and deer jerky out of the same stand and make serious profit.

Since you live in Austin make a trip out to enchanted rock and hike there. Its an easy hike that both of y'all could easily do together.

Day trip to SA and go to Natural Bridge Caverns. Nice tour and you get some walking and learn something along the way. Or head out to Marble Falls for some kayaking. Beautiful area.
