Looking to purchase a butcher knife (or similar) as a gift and I am running into issues trying to decide and do not have the time to do the research. I am looking to spend $200 or less (prefer 100 to 125). I would like a blade circa 8 inches and one that holds an edge over being easy to sharpen (within reason).

Look forward to your responses! Thanks!

I don't have a suggestion other than to put the word "knife" in your subject line...it will get a lot more responses..

I'm not sure what you mean by butchers knife. Do you mean a chefs knife? Or a cleaver?

Either way, I would go with Wusthof Classic Series. Unbelievable knives. I don't have a cleaver, but I have a couple chefs knives and they are the tits.

cleaver

8" chefs knife

You dont need to spend that much. I asked my butcher what he reccomended a few years ago. This Victorinox Frochner is what he suggested. I bought one and like it a lot.

The people at Americas Test Kitchen like Victorinox, it is usually the winner of the Equipment Tests, because of the great value. But they seem to pick Wusthof best overall.

Everyone I know that went to Culinary school uses Wusthof Classic, but they do get a discount.

They have those Victorinox Frochers on Amazon. I was going to suggest that but never handled them. I do like the Wusthof classics though.

Henkel is another brand that people really like. European stule knives like the wusthof. And shun has already been mentioned. They are very well liked as well.

Get a nice knife for $50-75, then have a personalized message engraved on it.
