Salt, pepper, fire.

Fish is delicious, why hide the flavor?

Let me start by sayin I generally grill fish "on the half shell".
For seasoning, I mix Tony's with butter and a little lemon, sometimes add garlic powder. Right before I'm going to put them on the grill, I sprinkle Tony's on the fish and spread my butter/seasoning mixture on the fish. I often squeeze a little more fresh lemon on the fish and/o place lemon slices on the fish. I also generally close the lid to get as much smokey flavor on the fish as possible.

I did some redfish on the scales monday night.

Seasoned with Bon Caca, black pepper, garlic salt and parsley. Then poured a mixture of melted butter and sweet baby ray's honey bbq sauce all over the slabs then grilled.

Cavender's and Tony's... after it comes off the fire I spread a little haze of butter.

That sounds good on redfish. Strong enough flavored fish to take all that.

Butter, lemon juice, swamp dust and parsley.

We did that to a red on Sunday less than an hour after pulling him out of Lake Pontchartrain. Fresh fish is so good when you're hungry.

I melt butter in a bowl and mix in some minced garlic.

Brush butter/garlic sauce into fish

Season with Tony's, little lemon pepper, dash of cayenne

Place lemon slices, orange slices and sliced onions on top.

Put on grill

Brush with bitter/garlic every so often to keep from drying out
