Sweet Baby Rays, Ragin Blaze Seasoning, cream cheese, duck, and jalapeños. I use the same thing for dove and backstrap.

^This on a toothpick and marinate (preferably overnight) in 3:1 italian dressing and sweet baby ray's.

I add a sweet pepper to mine as well as a slice of portabello mushroom. Maybe overkill but the taste is amazing. I do not marinate mine.

marinate the duck or dove overnight in Italian dressing and lots of crushed garlic. roll around pickled jalepenos and cubed up pepperjack, wrap in bacon, toothpick, grill 10 minutes and baste with mollasses/cider vinegar

dove/duck/backstrap
granny smith apple
fresh jalepeno

cut bacon in half. half cook bacon on the stove so it is still flimsy but is still decently cooked so when you cook the popper together, you dont get undercooked bacon or over cooked game. heat oven to 350 and wrap game, apple chunk, and jalepeno in a half slice of bacon and stick with a toothpick. put in oven for around 20 min or until done. I do this rather than the grill be the popper cooks in the bacon grease and holds the flavor better.

for an added bonus:

honey
orange juice
red pepper flakes
orange zest
salt
pepper
cajun seasoning

I dont know measurements bc frankly i dont use them, but put everything together in a pot and bring to a boil and pour over your poppers for an extra citrusy/spicy kick

best idea ever. hate cooking bacon wrap shite cause i always feel like the bacon is never cooked fully.

I usually get my pit as hot as I can, then roll them around grill until bacon is cooked and take them off. Cook them medium rare with whatever kind of seasoning you like . Try not to over cook cause they will dry out and be tough. Also if you run the breast through a tenderizer before seasoning, they are even better.

Just thought about it, but I feel like mixing a pepper jelly (orange comes to mind) with the cream cheese would be a nice added bonus.

I marinate mine in the Tony's wild game marinade and wrap it all up and smoke them until the bacon is done.

I marinate the duck breast in teriyaki. Gives a sweet component to the bombs.

Everything said here so far is solid....I marinate in anything from beer and cabinet spices, Steens syrup, Dr Pepper....

....but the best flavor I've found is Allegra....it's on the same aisle as Tobasco, Worcestershire, La Hot sauce.....

We call them Duck Nuggets or Bambi Bites....

Ingredients

Duck breast
Cajun chef Jalapeño peppers
Tony Chachere roasted garlic injectable marinade
Philadelphia cream cheese
Bacon
Tooth picks
Food processor
Cake mixer
Big easy greaseless fryer

Process

Inject duck breast with roasted garlic marinade, dice Jalapeño Peppers in food processor drain juice, mix cream cheese and jalapeño peppers with cake mixer, lay duck breast flat put a dallop of cream cheese pepper mix on duck breast wrap with bacon and stick with toothpick to hold together. Set on greaseless fryer basket if you have the rack that goes in it you do up to 50 breast at a time. The great thing about the big easy is you do not have to flip the breast so all of the cream cheese stays in the popper. Enjoy

I’ll go ahead and mention a little tip since nobody has yet. If you freeze the cream cheese first it doesn’t run out of the meat all over the place while cooking.

Good tip on the cream cheese. I cooked some this weekend and didn't have my regular marinate. I had some Landry's Teriyaki and Mesquite marinate on them and they were deliciouso.

For something different, add a little sweet Thai chili sauce to it. Pretty good.
