Inshore/Offshore fishing Orange beach area

I now have 24/7 access to a 21' Cobia, as well as a 26' cobia with twin 150s for a small charge of $100 a day.
I am an experienced freshwater fisherman, but know nothing of the Orange beach area fishing. Should I just stick with the free 21' Cobia and fish inshore, or take the 26' offshore(is offshore fishing good in the area? Is the 26' even needed to get where the fish are?)
If the speck fishing is good inshore, I have no desire to do anything else.

We use to take my FILs 20' bay boat out to the 15mi rigs for snapper. Earliest in the morning was always best, always seems slick as glass out there. We did fish the rigs in mobile bay aswell. Get some croaker and carolina rig on bottom. Good luck

There are a couple of wellheads 5 miles out from OBA. I've caught some sheepshead on them.

Yep. Wasnt monster snapper at the 15mi rigs but we would always catch our limit quickly plus a few mangroves and vermilion. we would also anchor out on dixie bar for reds

You might start out in Perdido pass (area north of the big bridge) to keep it contained and get a feel for it.
I have never had much luck in the back but you can anchor up by the bridge and catch a handful of different fish off of the pilings.
Ono Island sits just off the side of the pass and has some good fishing at night under the lights.
You can venture out under the bridge a little ways into the gulf side and catch spanish macks within view of the shoreline.

Any areas inshore where there are canals with flowing water that hold specks/reds?

Unfortunately you wont find this area to fish marsh/South La style.
There arent really any flowing cuts and canals or grass. You will be fishing open water and beating docks.
ETA: To be quite honest, the inshore fishing is fairly underwhelming.
Its 30 miles from the bridge to dixie bar area. You dont necessarily have to go sit on dixie bar for bulls, that whole spot where the gulf and bay meet is great fishing. I caught huge black drum, sheepshead, trout and reds from the beach fishing behind the fort.

ETA: 30 miles will be a long run if I go the bayside with the wake zones. I guess if I take the pass to the gulf and head that way it would be bad

Yes most boats just anchor up off the beach and throw toward the fort.
As far as running, it would be a bitch to get to from the pass, someone else will have to chime in on how feasible it would be to run the gulf side shoreline all the way down
ETA: Stop by Top Gun Tackle in OB, buy a little something and pick their brains for a little help in the pass to start out with. They have always given me good info.

I'll be in Perdido Key this weekend without a boat, what are my best options? I'm thinking sand fleas/dead shrimp off of the beach should produce something. Anyone have any luck near Perdido Pass by the rock jetties?

Please don't anchor on Dixey Bar. You frick up the drift for everyone else.
Best fishing for Dixey Bar is the falling tide. Last couple of hours of it being the best.

Fish the jetties and near the bridge pilings in the pass with shrimp. I have caught reds and stuff under there from the shore.
Caught some big arse blues on the pilings from boat.
On gulf side from beach use squid or mullet, wade out, haul it as far as you can and hang on tight. Prepare for hardheads but I have caught flounder, shark, ray, pompano, etc.
Look for ladyfish and reds running the shoreline on the gulf side also.

Not saying you would but you'd be surprised and how many people do. Some of the worse are guides.
