If you’re budget isn’t really a budget and you want a phenomenal rifle then get a Springfield Armory Waypoint in .308. It’s an absolute steal even at its price point.

For someone just looking to get into it just get a savage axis or 110 in 308. Recoil isn't bad, gun is more accurate then you will be and you will always find ammo.
After you have done it for a while you can start looking to step up.

This is all spot on. I would add a 6.5 CM although some people love to hate it.
7MM-08 is great but I'd stay away from it. Ammo is too hard to find and more expensive than any of the above.

It comes with a very good fiberglass stock, where most other stainless/synthetic rifles come with Tupperware. Great controlled round feed action, with the best safety ergonomics and functionality made. Decent trigger. Reasonably priced for what you get. Lightweight. The stock alone would be a $300 upgrade on other plastic stocked rifles.
I personally like the classic mauser style action with a hinged floorplate. The model 70 supergrade would be my choice if shopping a wood/blued rifle.

Savage Axis in 308. My kids are killing plenty with theirs. I bought them a few years ago. Plenty accurate to 300+ yards. Zero complaints. You can buy two for the price of what some of these other guys are suggesting for one rifle.

Xbolt would be a lateral move at best IMO. For my tastes, horrible downgrade.
Light, accurate, affordable = tikka and IMO nothing else really comes close.

I have a .300 win mag. The ammunition is very easy find considering. You go with any odd ball rounds that might be better for whitetail but impossible to find.

For the money Tikka T3 30-06. Got at Buds for 550. Put a Vortex scope 300 bucks. It's lite easy to handle. I've got a Ruger M77 as well as Remington 770. Both are good for Hunting in the south where 200 yards is a long shot. As guys says earlier any name brand gun with good glass will work. Plus you can always upgrade later. You can usually always get your money out of selling and upgrading. Good to hear you got the fever.

I know you mentioned a rifle, but I’d suggest at least also getting a bow. I find it to be a much more enjoyable hunting experience. There’s nothing wrong with rifle hunting, and I do it as well, but it’s hard to beat the up close and personal experience of bow hunting.

I have a Remington 700 in 30-06. I've killed deer out to 318 yards and the gun is capable of more than that, I'm just not .
It's all the rifle you will ever need for just about any North American big game animal. Hard to beat it. Just get quality optics.
