Freezing Meat

Got into an argument with a buddy and want to see how y'all freeze yalls meat.

Venison, hogs, etc - the back straps and tenderloins I put in freezer bags (ziploc shite) filled with water covering the meat and freeze. He says he just puts them in the freezer bags and freezes with no water. I've always done it this way and have not bought a vacuum sealer for some reason, which I wouldnt use water if i had that. Which way do y'all do it? Rest of the shite comes from the processor all professional and ready to freeze so no question there.

Fish - cover filets in water in the bags and freeze and he does the same. Do y'all do it differently?

Roasts I wrap in freezer paper and put in the freezer. Usually take 2 wrapped roasts and put them in a gallon ziploc after just for a little added protection. Backstrap and tenderloins gets vacuum sealed, though before we had a vacuum sealer we just wrapped it in freezer paper. Sausage comes vacuum sealed from wherever we bring it to get made, and ground meat gets weighed out in 2 lb increments and vacuum sealed. Fish filets I put in quart ziplocs fill with water and freeze.

I wrap meat in double freezer paper. But only keep a year then its used up. Have used ziplock for ground meat. Make sure to get all the air out.

Don't fish much but always use ziplock fill with water to cover fish.

Fish I cover with water.

Deer I vacuum seal.

But I have wrapped a ton of deer in saran wrap foll lowed by butcher paper wrapped tight. Key is keep the air out.

I vaccum seal everything. Before I bought the sealer I froze fish in water and meat in a bag, no water

if it comes out of the water, i freeze in water.

everything except deep water fish gets frozen in water

brah i cant imagine how crappy your deer must taste. wrap in butcher paper, film, then ziploc.
hey all you dudes that still freeze fish in water try this if you have enough room. dip the filets in water and lay them out on a cookie sheet in the freezer. when frozen then put into a ziploc and return to freezer

Deer, rabbit, squirrel = no water. Clear wrap, butchers paper, ziplock bags (good for a year)

Fish = water (did y'all know the water u freeze it in can affect the texture and taste? Kinda interesting self-conclusion I've made)

This is very true, had this happen a few times. If you are at a camp and the water has a odd smell, it will definitely work its way into the taste of your fish. Drink your beer and use your bottled water for freezing fish.

FWIW I've eaten a few deer roasts that were 2 years old frozen only wrapped in freezer paper and it was fine.

I process my own deer meat (no jerky or sasuage just steaks and ground) and I clean everything real well before and after cutting steaks. Weight out about a pound of meat, wrap tightly in plastic wrap, then wrap tightly in freezer paper. Mark date and tape shut. Lasts about a year.

I usually put squirrels and things like that in ziplocs full of water.

Deer gets cut up into roasts and wrapped the old fashioned way.

I don't put water on my deer meat. I freeze rabbits, squirrels, and fish that way.

I wrap my deer meat in freezer paper or I put them in the freezer bags with the pump that sucks all the air out of them. They work the best and I've pretty much moved to using them for everythign.
