There's a park at the end of the island headed west, you can drive down the road and wade out in the flats. Specs, Reds, Flounder all roam these waters.
Dig up sand fleas and throw them in the surf for pompano
Also in the morning throw a top water in the surf
Not a guide but you can fish for free my way

I don't think there are many options in Perdido. However, I have heard good things about capt Chris Williams out of Pensacola. I'd contact him. It's not a far drive and I'm sure he could help you out.

I hired a guide in Nov. Don't remember the name but it really didn't matter, everyone fishes the same way. The red fish were boiling on the surface, sort of like a pod of dolphin, in the bay. They would go down then back to the surface 1/2 mile away. there were 20 to 30 boats all around the school throwing artificial baits. 5 or so boats at a time would hook up and take at least 15 minutes to land the bull reds.
Once released, the guide would look on the horizon for the herd of boats and go get in position. I caught 4 reds all over 27" in about 2 hours. They all had to be released, in Florida you can't keep anything over 27".
We spent another hour and a half fishing for trout or flounder without a bite.
