This is meant to be a statement I'm assuming.
The hindquarters I do. While it is hanging there, it is much easier than when it is cold on the butcher block.
I just make sure not to hit the scent glands while I'm cutting.

Very rarely do I field dress a deer. If I do field dress one, I don't find it necessary to cut through the pelvis.

I remove the rectum and bladder w/o cutting through the pelvis. Like you, I use my fingers to loosen up the bladder for removal. I cut through the pelvis only to fit the hindquarters in the ice chest. I use a pair of long handled loppers to cut all the bones. Learned that from an orthopedic surgeon I know. I think he used the loppers because it sounded a lot like being in the OR, thereby reminding him of $$$$. I use the loppers because it's easier and faster than using a bone saw. Just remember to buy your own loppers for $5-6. Your wife won't like you for using HER loppers. I've deboned a bunch of deer through the years, but nowadays I let the processor do the deboning.

Well it wasn't a question. Lol.
I have done it both ways. It depends on the situation but if I have the oppurtunity to remove meat from animal while hanging I will. If I have to pack it out, or if I am in a situation where I may not be able to keep meat clean I will quater leaving skin on the hams and shoulders and then finish dressing them out at home. I carry gallon size ziplocks with me and 2 will handle even a big boars backstraps.

got a little saw on my knife that i use to cut thru the pelvis when field dressing. Always field dress because i will have to drag that mutha a long way on public land. Now if I could just drive my 4 wheeler right up to it, I might not.
