You will get 100 different answers, but they should all contain the word "rare".

That's really all that matters, the rest is your taste.

My favorite is to make jerky out of it. I usually get 4 deer/year so 8 back-strap and make a big batch of jerky.

Look for a veal picatta recipe and sub pounded backstrap. you're welcome.

No. If I remember right the first one was grilled the second in a hot skillet. Either will work fine.

1. cut pocket in side fill with one seedless jalepeno pepper ( or more if some like it hot) and cream cheese wrap with bacon- season with some tonys and a LOT of garlic powder in and out wrap in aluminum foil and put on grill time ?? for medium rare
2. slice thin- salt pepper garlic powder- wash in egg and coat with Italian bread crumbs - fry Lightly in peanut oil (panne) (takes some time) but worth it - I serve with pasta(alfredo or emerils or whatever)

Im definitely no expert, but this is how I did one and it was freaking awesome.

Mix some cream cheese and chopped jalapenos.
Butterfly the backstrap and stuff with the mixture.
Make a bacon weave and wrap the stuffed backstrap.
Brush on bbq sauce while on the grill.

Fantastic. Dont remember temperatures or cook time.

Here it is my man.

1. Split the strap down the middle to make a pocket. DO NOT CUT THROUGH THE ENDS!!!

2. Grab one onion(sliced), one bell pepper and 2 jalepeno peppers and put on the grill for a few minutes to get them soft.

3. Pack jalepenos with cream cheese and pack in the back of the strap then pack them in with more cream cheese.

4. Thin slice onions and bell peppers and pack in on top of the cream cheese to keep it in.

5. Wrap with bacon and a little twine to hold it together.

6. Smoke with pecan wood for 40 min then wrap in
tin foil and let cook until medium-rare.

7. Unwrap and crisp bacon over coals.

8. Grill pineapple and cherry tomatoes as your side.

9. Let stand for 10 min and Serve.

10. Catch panties before they hit you in the mouth. (or don't, I don't know your fetishes).
