actually, the big ones taste fine. they just require A LOT more effort to drag out, load up, clean, etc. meat is a little more dry but they do not taste "off".

You've been eating different "big ones" than I've had any experiences with.

On two different occasions, I've given away pigs in the 250 range....one I was present at when they cooked it......and I could smell it when I drove up.

The other I was given a tenderloin from, it was fried, but it too had a strong smell.

Taste is subjective, but I don't cook any male over 80lbs if intact, and prefer sow's on the smaller end as well.

The hogs slaughtered on farms are not all small sows.


The meat in any wild hog (assuming it is not ill) is delicious regardless of age and size. The larger older boars do sometimes have tougher meat but it tastes fine. Boars will frequently piss on themselves and smell horrid but the meat does not have this smell.

However, how long the animal is alive after a fatal wound occurs, how much stress it goes through in the last minutes, how contaminated with bowel contents the meat becomes, how quickly it is processed, how quickly the meat is cooled down and properly stored all affect the meat quality.


The larger the boar the more likely the hunter is on the wrong side of most if not all of the above criteria.

Plus, a grinder takes care of most all tough problems.

And a bag or 2 of sausage seasoning, add extra sage.
